Mamma Mia Lamb Burgers Recipe

These Mamma Mia lamb burgers are perfect if you want to change up burger night! Enjoy on date night or cook them up for the kids midweek in just 15 minutes.

Serves 4

  • 400 g minced lamb
  • Handful of basil leaves, finely chopped
  • 1 clove garlic, crushed
  • 2 rounded tsp capers or black olives (pitted and chopped)
  • Salt and pepper
  • 1 X 125g ball mozzarella
  • 4 slices aubergine, grilled
  • 4 large slices courgette, grilled
  • 4 mini ciabatta (or 1 large), lightly toasted
  • 4 small handfuls rocket


Step 1

Place the mince in a bowl, add the basil, garlic, capers (or olives) and seasoning. Mix well.

Step 2

Divide the mixture into 4 and shape into equal-sized burgers.

Step 3

Cut the mozzarella into 4 slices.

Step 4

Grill the burgers for 6-8 minutes on one side then flip over. When burgers are flipped, add aubergine and courgette to the grill pan and cook alongside the burgers for 3-4 mins. Place the mozzarella on top of the burgers and grill for a further 2-3 mins. Season with black pepper.

Step 5

Garnish the bottom slice of bread with rocket, add the vegetable slices then the burgers. Add the top slice of ciabatta.


Step 6

Serve immediately.
