Swedish-Style Lamb Meatballs Recipe

Try our Swedish-style lamb meatballs with cranberry sauce, mash and peas for a great midweek meal idea. Cooked in just 20 minutes, it goes down well with the kids. Get rolling!

Ingredients

Serves 4 

  • 500g lamb mince
  • 1 large potato (about 240 g), peeled and diced
  • 1 tbsp rapeseed or olive oil
  • 2 tbsp freshly chopped parsley
  • 5 tbsp double cream
  • 3 tbsp breadcrumbs
  • 1 medium onion, finely chopped
  • Salt and pepper
  • Jar prepared cranberry sauce (about. 225 g)

Method

STEP 1

Boil the potato in boiling water for 10 to 15 mins. Drain, mash and set aside.


STEP 2

Meanwhile heat the oil in a frying pan and soften the onion gently for 10 mins over a low heat.


STEP 3

Pre-heat the oven to Gas Mark 6/200°C.


STEP 4

Place the lamb in a bowl. Add the parsley, cream, breadcrumbs, onions, salt, pepper and mash. Stir until you have a soft but not sticky mixture (add more breadcrumbs if necessary).


STEP 5

Roll into small balls roughly walnut sized and place on a shallow, lined baking tray. Bake for 15 to 20 mins in the oven.



STEP 6

Warm the cranberry sauce and serve with the meatballs, mashed potatoes and peas.
