Lamb Pittas with Tzatziki Recipe

Ingredients

Serves 8

  • 500g lamb stir-fry strips
  • ½ cucumber
  • 2 tbsp olive oil
  • 2 garlic cloves, peeled and crushed
  • 1 tbsp thyme leaves, chopped
  • 1 heaped tbsp dried oregano
  • 1 tsp ground cumin
  • ¼ white cabbage
  • 2 tbsp white wine vinegar
  • 200g natural Greek style yoghurt
  • 1 tbsp fresh mint leaves, chopped
  • 1 tbsp dill leaves, chopped
  • 4 large pitta breads
  • salt and black pepper

Method

STEP 1

Cut the cucumber in half lengthwise, remove the seeds and grate it very finely. Add plenty of salt and leave it to drain in a sieve.



STEP 2

Meanwhile, place the lamb in a bowl. Add the oil, half the garlic, thyme, oregano, cumin, salt and pepper. Mix, cover and put in the fridge to marinate for 30 mins.



STEP 3

Slice the white cabbage very finely. Pour the vinegar over it and leave it to infuse.



STEP 4

Squeeze the cucumber to remove as much water as possible. Mix the cucumber into the Greek yogurt along with the mint, dill, and remaining garlic. Season to taste.



STEP 5

Fry the lamb strips in a large frying pan, over a medium heat for 1-2 mins on each side. Meanwhile, warm the pitta breads in a toaster, or under the grill and slice in half.



STEP 6

Serve all the ingredients (bread, meat, sauce and cabbage) and let everyone create their own pitta pockets to their taste.




CHEF'S TIP

if you have time, leave the lamb to marinate longer, for maximum flavour.
